Some time ago my house was suddenly inundated with Pacific leafy greens, so I experimented quite a lot to find new ways of tasting them. 🌿
This wild coriander spread was my best experiment. Yummy and very easy to prepare, it’s perfect for healthy snacks.
Ingredients:
– 1 cup of cashews (or sunflower seeds)
– 1 cup of wild coriander
– 2 garlic cloves
– 1 dash of salt
– 1 tbsp. olive oil
– 2 tsp. nutritional yeast
– the juice of 1 lemon or 4 kumquats
Directions:
1) Soak the cashews for around 6 hours.
2) After soaking the cashews, rinse them well and place all the ingredients in a powerful blender.
4) Place in the fridge for at least 1 hour.
3) Blend until creamy.
This spread is super tasty but yet much healthier than the options we find at the supermarket.
In fact, industrial spreads are often packed with salt and high-sodium diets increase our risk of high blood pressure and heart disease. So, this spread is a good example of how our food can be very tasty even without a lot of salt. 😉
Another advantage is that it’s free from cholesterol and contains a low amount of saturated fat.
Nuts and seeds are a very good source of “good fats”, protein and minerals such as phosphorus, magnesium, iron, potassium and zinc. Eating a handful of them every day is a very healthy habit that can help us prevent NCDs.
