FRESH POMELO SALAD

This is a very quick and easy recipe, promised ðŸ˜‰.

Fresh, light and yummy, this pomelo salad is a perfect side dish for Summer (i.e. 9 months of the year at these latitudes!).

Ingredients (serves 2 to 4 people):

– 1 pomelo
– 1.5 tsp. of soy sauce
– 1.5 tsp. of sesame oil
– 1-2 chilies
– sesame seeds or peanuts (optional)

Directions:

1) Clean and chop the pomelo and place it in a bowl,
2) In a cup, mix the soy sauce with the sesame oil and the chopped chilies to prepare the dressing,
3) Add the dressing to the pomelo and toss the salad,
4) Add the sesame seeds or the crushed peanuts (raw and unsalted). Both versions are good but my favourite is with crushed peanuts ðŸ˜‹.

This salad is a great source of vitamin C, a powerful antioxidant that can fight free radicals and prevent oxidative stress in our body. Antioxidants can boost our immune system and help us prevent some types of disease.

Adding foods rich in vitamin C to our meals is always a great idea , and in particular for those of us who have issues with iron absorption. In fact, this mineral is better absorbed when eaten together with vitamin C.
