SPICY PAWPAW GAZPACHO

For those who like unusual flavours, this pawpaw gazpacho (cold soup) can be an excellent starter.

And it’s also very quick and easy to prepare 😉

Ingredients (serves 4):

– 4 small Hawaiian pawpaw
– 4 small red capsicums
– 8 garlic cloves
– chilies to taste
– 1 pinch of salt
– 1 tbsp. olive oil

Directions:

1) In a non-stick pan, roast the capsicums and 4 garlic cloves for around 15 minutes and turn halfway through cooking. Do not add any oil. Set aside to cool down.

2) Blend all the ingredients together until smooth. Add water as necessary.

3) Serve chilled or at room temperature.
