MANGO MOUSSE

 

 

 

 

Are you looking for a delicious dessert recipe low in fat and added sugar? If yes, then this mousse is a very good option when mango is in season!

It’s also a very tasty way to add more dietary fibre, vitamins A, C and E to your diet.

 

Ingredients (serves 2-3):

– 100 g yellow sweet potato (3/4 cup)

– 1.5 tbsps. coconut cream

– 100 ml almond milk (1/2 cup)

– 150 g mango (flesh of 1 medium mango)

– 1 tbsp. maple syrup

 

Directions:

1) Steam the sweet potato until soft (around 20-30 minutes). Set aside until it cools down.

2) Blend all the ingredients until soft and creamy.

3) Serve chilled.
