Ingredients (serves 4):
Â
– 2 cups orange or purple kumala (sweet potato)
– 2 cups cooked white beans
– 3 cups chopped long beans
For the peanut sauce:
– 2 tbsp. peanut paste or butter (100% peanut)
– the juice 3 kumquats
– 1 tbsp. soy sauce
– 4 tbsp. water

Directions:

1) Soak the beans overnight. Rinse them well and cook them in boiling water until soft.
2) Rinse well the kumala and steam it with the skin until soft (for around 30 minutes). Halfway through cooking, add the long beans. Peel the kumala and chop both ingredients.
3) In a bowl, prepare the peanut sauce by combining the peanut butter, water, soy sauce and kumquat juice.
4) Combine all the ingredients together and toss well.

This recipe is very balanced as the kumala is a good source of healthy carbohydrates and the beans are rich in plant protein.
