Healthy and Creative Cooking with Pacific Plants
Pacific Vegan, by Suva-based nutritionist and lifestyle medicine professional Vittoria Pasca, is a plant-based cookbook focusing on seven Pacific plants:

🌿 watercress
🥔 cassava
🥥 coconut
🍍 pineapple
The book describes the nutritional benefits of each of these plant foods and explains how to prepare them in ways that are healthier and better preserve their nutrients.
It contains over 40 healthy and creative fusion recipes made from local ingredients from the Pacific.
They are largely low-fat, low-sugar and completely free from cholesterol.
Vittoria has been teaching healthy cooking classes with Fijian plants since 2017 and decided to write her own cookbook in order to share her knowledge with a broader audience.
Pacific Vegan is proudly 100% plant-based so that Pacific fruits and vegetables can get the spotlight they deserve.
In 2022, Pacific Vegan won the Best in the World Gourmand Awards in the South Pacific category and was also nominated in the Health and Nutrition and Vegan categories.
